El Parasol is the product of two ambitious youngsters, Larry and Pete Atencio. In 1958, the two boys set up a roadside stand in their hometown of Espanola. In the summer months, they sold their mothers tacos and tamales under a patio umbrella and developed quite a following. From a stand to a taco wagon and finally a sit-down restaurant the Atencio family followed their dreams and now have 6 locations with a 50 mile radius of Santa Fe. The patio umbrella was adopted as the logo to remind locals this was the Atencio family business and that they could expect the same great food no matter what location they chose. El parasol offers delicious Northern New Mexico and Mexican traditional favorites with a variety of vegetarian options. Not only is El Parasol a locals favorite, but many of their recipes have been featured in national publications such as Bon Appetite, New York Times and Sunset Magazine.
